Just put 30kg of roe deer in my freezer. nomnomnom.

It was shot a week ago by a friend of a friend and has bin hanging until yesterday when they cut it up.

A week is a little short to hang game.When I worked as a gamekeeper we'd hang game til it started wriggling with maggots. Admittedly it was a bit too gamey for me so I only hung stuff for about 2 or 3 weeks.I'd definitely say a minimum of 18 days for a whole deer though.

I think I'm satisfied though. It is about 56 degree days as they call it in Sweden and 40 is suppose to be minimum. I would'nt want to have something with maggots lying around =). But sure it is an art to hang it. The best meat in my experice you get putting it in the oven over night at a very low temperature.
